Mashed potatoes with homemade herb pesto

This tasty recipe for mashed potatoes with herb pesto is a wonderful side dish that impresses with its simplicity yet sophisticated taste. The waxy potatoes are processed into a creamy mash and refined with an aromatic herbal pesto made from garlic, pine nuts, fresh parsley and high-quality olive oil. Ingredients

  • 400g potatoes
  • Salt
  • 5-6 tbsp olive oil
  • 2 cloves garlic
  • 50 g pine nuts
  • ¾ bunch of parsley (or other herbs of your choice)
  • 80 ml olive oil

preparation

Herb pesto
Peel and slice the garlic. Wash and roughly chop the parsley. Place in a deep bowl with the garlic cloves, pine nuts, oil, salt and pepper and puree into pesto using a hand blender.

Mashed potatoes
Bring the potatoes to the boil in plenty of salted water, reduce the heat and simmer for about 20 minutes.

In the meantime, preheat the oven to 220 degrees top and bottom heat. Drain, rinse and peel the potatoes. Brush a baking tray with two tablespoons of olive oil, place the potatoes on the baking tray and flatten them with a glass.

Salt the potatoes and spread the pesto on them. Bake in a preheated oven at 220 degrees top and bottom heat for about 20-25 minutes until golden brown.
