Strawberry dessert in a glass

In just 15 minutes you can prepare this quick strawberry dessert in a glass for 4 small portions. Ricotta, natural yoghurt, birch sugar, vanilla sugar, vanilla extract and lemon zest and juice are mixed in a bowl and refined with biscuit crumbs and strawberries. Garnished with extra cookies and fresh strawberries, this is the perfect summer dessert that comes together in no time!

Ingredients

  • 16 pcs. biscuits (oat biscuits, butter biscuits, ...)
  • 150g ricotta
  • 100g natural yogurt (5% fat)*
  • 4 tbsp birch sugar*
  • 2 tsp vanilla sugar*
  • 1 tsp vanilla extract*
  • 1 organic lemon
  • 250g fresh strawberries

* If you don't have vanilla sugar or extract on hand, you can alternatively use a little vanilla yoghurt instead of natural yoghurt, but then reduce the sugar slightly.

Looking for a really quick and good dessert? Then this strawberry dessert in a glass is just right for you.

In a bowl, mix the ricotta with the yogurt, sugar, vanilla, vanilla sugar and the zest, as well as the juice of an organic lemon. Season to taste and set aside. Crush the cookies into crumbs in a freezer bag with a rolling pin. Wash the strawberries, remove the greens and cut them in half. First divide the biscuit crumbs into the prepared glasses, place the strawberries on top (press them against the glass wall with the cut surface facing outwards) and pour the cream over them. Serve with a few leftover cookies and fresh strawberries and enjoy!
