A simple mixed salad with seasonal ingredients that is guaranteed to taste good at any time of year - whether as a main course or a colorful side salad.
Wash the lettuce, spin dry and divide into two bowls. Cut the cucumbers, spring onions and tomatoes into small pieces and distribute over the salad. Halve an avocado, remove the seeds and cut it in a diamond shape - this way the soft flesh can be squeezed straight out of the peel in the form of cubes.
The dressing is best mixed directly over the salad bowls: spread 3 tablespoons of vinegar and 3 tablespoons of pumpkin seed oil per bowl, a fine pinch of salt and pepper, and a tablespoon of the nut mixture over it and serve.
