Strawberry dumplings

Enjoy the delicious strawberry curd dumplings - a sweet temptation with fluffy curd dough and juicy strawberry filling. The dough made from lean curd cheese, egg, spelled flour, sugar and lemon zest is formed into balls, encases juicy strawberries and is then cooked in lightly salted water. The golden brown roasted butter crumbs with almonds give the dumplings a delicious touch. Serve with powdered sugar and fresh strawberries for an irresistible dessert!

Overview

  • Duration: 70 minutes
  • Quantity: 8 dumplings
  • Difficulty: medium

Ingredients

  • 250g lean curd/quark
  • 1 egg
  • 100g fine spelled flour
  • 40g powdered sugar
  • 1 teaspoon vanilla sugar
  • 1/2 organic lemon
  • pinch of salt
  • 8 large strawberries
  • 1 tbsp butter
  • 1 tablespoon of sugar
  • 100g (spelled) breadcrumbs
  • 2 tbsp sliced almonds
  • Strawberries and powdered sugar for serving

    preparation

The curd dough is simple and very quick to prepare. Mix the curd with egg, flour, salt, zest of half an organic lemon, vanilla sugar and sugar into a creamy mixture and leave to rest in the refrigerator for about half an hour. For the filling, wash the strawberries and remove the greens.

After resting, transfer tablespoon-sized portions of dough from the bowl onto a floured work surface. First form it into a ball and then press it slightly flat in the (well-floured) palm of your hand. Place one of the prepared strawberries in the middle and carefully close the dumpling. Simmer the finished dumplings in lightly salted water for about 10 minutes.

In the meantime, heat a larger pan and toast the breadcrumbs with the almonds in the butter - but be careful with the heat! The crumbs darken quickly. Add sugar and mix everything well.

Use a slotted spoon to carefully lift the dumplings out of the water and, drained well, add them to the pan with the breadcrumbs. Cover the dumplings all over with the crumb mixture and serve with some powdered sugar and fresh strawberries!
