Corine took a close look at the Instagram hype recipe for us. To be honest, a real scrub, just like the original according to an oriental recipe, is a very time-consuming affair. Because this vinegar and fruit-based syrup should steep for at least 4 weeks. Four weeks was too long for Corine - so she shortened the waiting time with her version, but it still tastes very refreshing and delights young and old alike! So you should at least start on Wednesday so that you can show off it at the barbecue or garden party on the weekend.
How does it work?
Clean the strawberries, cut them into small pieces and put them in the glass(s). Add 60g cane sugar and shake. Add a good pinch of ground pepper and 5-8 peppercorns. Now pour in apple cider vinegar until all the fruit is well covered. There should then be a finger's width of space in the glass so that you can shake the mixture well. The sugar, strawberries and pepper should be well distributed and mixed. Then put it in the fridge. Shake well every now and then in the following days.
The liquid turns wonderfully red. The strawberries give off their entire aroma to the vinegar, while sugar and pepper support the taste. Finally, strain the mixture through a sieve. Squeeze or squeeze the fruit a little more and throw it away. Add 120g of cane sugar to the liquid. This is now boiled down to syrup for at least 10 minutes, stirring occasionally.
Pour into a clean, sealable jar or bottle, refrigerate and the scrub is ready! This will now last about 1 to 2 weeks in the fridge.
Our Corine also gave us a delicious tip: The strawberry scrub tastes best with a handful of ice cubes, cold soda water, a little lime and a few leaves of fresh mint or lemon balm. A wonderful summer drink! The shrub also goes wonderfully with sparkling wine as an aperitif or as a refinement over a scoop of vanilla ice cream.
