Classic double-fried french fries

- 1.000 g potatoes (predominantly waxy)
- 500 ml of oil for frying
Wash and clean the potatoes. Cut into 1.5 centimeters thick strips. Put the potato sticks in water for 15 minutes. Heat the oil in a fryer to 140 degrees. Remove the potatoes from the water and pat dry.
Deep-fry the potato sticks in the fryer for about five minutes, drain on a kitchen roll and let it rest for about 15 minutes.
Heat the oil to 175 degrees and fry the fries again for two to three minutes. Serve the fries with salt.
If you like, you can also peel the potato before frying.
